- Black Angus roasted prime rib with a horseradish cream sauce
- Grilled salmon filet with a prickly pear teriyaki or lemon caper sauce (additional fish available, market price)
- Stuffed pork loin with a sun-dried tomato, spinach, and piñon nut stuffing in a port wine cream sauce
